Tacos or pasta? How about Both

Just last week, after a long day at work with no motivation to go to the store, I decided to wing it. With a large family like mine it can be difficult to make one dinner that everyone is in the mood for. My younger kids were asking for pasta, my older kids wanted tacos, and my wife was just over the day.

I started digging through drawers and cabinets in the kitchen to see what I could do. To my surprise what I came up with was a huge hit.

Now keep in mind I threw this together, I did not measure a thing. So it does not need to be exact to turn out delicious.

Remember this was enough for a 14 year old male, 14 year old female, 12 year old female, 8 year old male, 6 year old male, 3 year old male and three adults.

2 large box of penne pasta

2 lbs ground beef

2 cans of red enchilada sauce

1 packet of enchilada mix

2 8oz box of cream cheese

Milk ( to make it creamy)

2 to 3 cups of shredded cheese

First I started boiling the water for the pasta. And cooked it according to the box instructions.

While the pasta was going I browned the hamburger and drained the grease.

I then mixed in the packet of enchilada mix with the hamburger. I then added about 1/2 of a can of enchilada sauce

Drain the pasta and add back to its pot. I then added1 and 1/2 cans of enchilada sauce and both blocks of cream cheese to the paste.

Once the cream cheese is melted I added the meat to it and mixed it all together.

After it was mixed I added about 2 cups of shredded cheese and some milk . Add as much cheese as your heart desires. For the milk I probably added about 1 and 1/2 cups. My kids like it creamy.

Mix everything together then dish it up. I added a little cheese on top and my kids ate it up.

This only took about 30 minutes to make.

I hope whoever this recipie enjoys it as much as my kids did.
